Host a Healthy Dinner Party

When I first started blogging, I contacted fellow Grit blogger Chassity Evans of Look Linger Love for her advice on how to get my blog out there. She was super helpful and encouraging, even though we blog about totally different things. She connected me with Grit, and when we realized how many mutual friends we have in common, we knew we needed to meet in real life.

 

So last week Chassity came over to hang out with some of those mutual friends and to get a little cooking advice for some easy family meals. Easy meals are my specialty! I work full time about 20 minutes away from my house, so cooking a complex or gourmet meal is just not an option most week nights. One of my hopes through HeavyontheVeggie.com is to help people understand that cooking is not hard, and how much healthier it is for you and your family. We had a great time cooking together and hanging out with some super cool artists.

 

Chassity posted about the get together on her blog yesterday, and I wanted to share it here, too. Here are Chassity's comments and photos, along with responses from myself: 

 

Chassity: I'm a meat and potatoes kind of girl. When I was little we lived on a farm. You do the math. I'll never be able to give up cheeseburgers or fried chicken. But I try to eat a variety of foods, too. And one thing that I do struggle with is making vegetable at home. And the fact that I can get the most awful tummy aches after eating vegetables and fruit doesn't help. What gives with that, anyway? Plate of fries? No problem. Sleeve o' cookies? Easy. Broccoli? I'm miserable for at least five hours. So when Claire of Heavy On The Veggie reached out to me, I took it as a sign. She's a nurse practitioner with a focus on nutrition and exercise. And we have a few friends in common. Wasn't long until we had a cooking party on the books...

 

Claire: I can make anyone love a vegetable. I'm fortunate that when I reached out to Chassity for some bloggy support, she took it as a sign to start eating more vegetables!

 

 
Chassity: This is Claire's pretty kitchen. And that's her on the right. And that's Teal, in well, teal. She's an artist. More on her later, this post is about food! Not art. So the focus for dinner was eating vegetables simply. IE, something I might actually try to cook myself at home. We roasted broccoli (I know, at home I'll switch it to cauliflower or something), grilled some okra, and made veggie pizzas. Even better, we had fun doing it.
 
Claire: If vegetables aren't easy, people aren't going to eat them. Plain and simple. And if they're not delicious...  well duh. I like to show people how EASY things can be, and that you don't need a fancy recipe to make it good! The pizzas are a great example of something quick and easy that your whole family will dig.
 
 
Chassity: Hey look, my friend Lulie Wallace was there. Again, this post is not about art, damn it...
 
 
Chassity: ... but it is about wine.
 
Claire:  Look how cute that wine bottle is. And the girl holding it. 
 
 
Chassity: I know okra seems like such Southern thing, but I swear it's tasty. And I had never had it grilled—divine. Claire just tossed it with EVOO, seasoned salt, and a little red pepper.
 
Claire: Ummm, I would like to know who thinks okra is not tasty?
 
 
 
 
Chassity: For the pizzas we used tomato sauce or pesto (I did half and half) on Naan bread and then loaded up the veggies. Roasted peppers, onions, mushrooms, whatever you want. We make pizza at home a lot and I regularly use roasted red peppers. So good. The broccoli was just tossed with EVOO, salt and pepper and then roasted in the oven at 400 for about 20 minutes. Claire squeezed a lemon over it before serving.
 
Claire: See??? EASY!!! We put the pizzas on the grill for about 15 minutes and just didn't even touch them. If that's not easy I don't know what is. 
 
 
Chassity: Good, healthy food with good people just makes you feel good. I've made it a priority to eat more veggies during my day. Thanks for the gentle push and guidance, Claire. Your blog is such an inspiration! I'm feeling Heavy On The Veggie. I'm pinning lots of veggie recipes here. Don't judge the other yummy recipes mixed in there. It's all about balance, right? ;)
 
Claire: Thank you, so much! I hope to keep passing that message on. It IS about balance, making good choices, and just eating more veggies every day! Chassity even confessed that she ordered a veggie sandwich the next day. One blogger (or reader) at a time, I plan to convert you all to vegetable lovers.
