Is anyone else a little freaked out that the highs this weekend are going to top 100 degrees? And it's not exclusive to Charleston—there's a heat wave all over. So start thinking "cool-down treats," and here's a good one, adult-beverage style: Margarita Soaked Watermelon. You can thank me later....
I made them last night for our taco night and they were delish. They're adapted from Martha Stewart's recipe, which calls for triple sec and sugar. That is not how I like my magaritas so I switched things up a bit. I basically made a batch of my skinny ritas and poured that over the watermelon and let it soak for a few hours (see recipe below). You could follow Martha's recipe and I am sure it would be great, but I personally just don't like that much sugar, hence why I used agave nectar instead.
Be sure to sprinkle with salt before consuming. This cool treat will make you forget how darn hot it is outside.
Caution: You can get tipsy off these babies. The recipe below is not meant for sole consumption—repeat, NOT a solo mission. Share and share alike, between four to six people. You don't want to mix too much tequila with the hot sun.
MARGARITA-SOAKED WATERMELON
(Serves 4-6)
1 baby seedless watermelon, sliced
1/2 cup good tequila (I use Hornitos for our Ritas—it's not crazy expensive, but it is good)
1-2 limes, juiced
2 tablespoons agave Nectar
Coarse Salt
Layer the watermelon in baking dish. In a small bowl, mix next three ingredients, and pour over the fruit. Let sit in fridge at least 45 minutes. Sprinkle with coarse salt when ready to serve.
