Fresh-Picked Produce + Tomato Sandwich Bites

We have a little place in Flat Rock, North Carolina that we come to each year in the summer. My husband's family has been coming here for many years. It is cooler than in Charleston, and even New York, and is wonderfully quiet. One of my very favorite things to do while in Flatrock is to visit the Hendersonville Curb Market—It's like visiting a place from way back when. It is only open on Tuesday, Thursday, and Saturday mornings, and to get all the good stuff, you must arrive by 10 a.m. or it'll be gone!

 
 
 
              
 
I am not sure what it is, but the peaches, corn, and other vegetables and fruits from the market just taste different... they are all divine! They are picked early each morning before we arrive, and the freshness of the produce makes cooking just that much more enjoyable. Evening get togethers are fairly common up here—I laugh that my mother-in-law ALWAYS has a busier social calendar than I have ever had.
 
 
 
            
 
 
 
Here is one of my favorite little quick and easy hors d'oeuvres that we almost always have on hand. I first must say, yours might not be as yummy as mine, unless you are up here, too! :) 
 
Heirloom Tomato Sandwich Hors D'oeuvres
 
Ingredients:
- Freshly baked sunflower wheat bread from the Fresh Market (my FAVORITE grocery store; they will slice it there for you). If you're not near enough to Pawley's Island to visit the Fresh Market, Whole Foods' bakery offers sunflower bread, too!
- Hellmann's mayonnaise
- Butch's Black German Heirloom Tomatoes
- A dash of salt
 
Simply make the tomato sandwiches, cut them into quarters, and wah lah! You have the perfect summer tea sandwich—not fancy, but unbelievably GOOD!
 
These sandwiches are a great lunchtime option, too... my husband practically lives off of them!
