(Editors Note: Charleston is such a foodie town that food and beverage superstars are hiding in plain sight, out of the James Beard limelight, but still very much creating and serving amazing food and drinks. This series profiles Charleston’s “hidden F&Bs.”)

Katherine Frankstone, who owns GreyGhost Bakery, used to want to own an Easy Bake Oven, but her dad told her she might as well learn to bake in a real oven. All grown up now, Katherine’s company makes more than a million cookies a year and supplies stores across the country.

Katherine’s take

Favorite Kitchen Tool or Gadget: Spatula

In My Refrigerator (3 Things): Almond milk, eggs, butter. Unsalted butter for baking or cooking and salted butter for spreading on biscuits or rolls.

In My Pantry (3 Things): Rice, vegetable stock, tomatoes

Favorite After-work Hangout: Felix on King Street.

Favorite Charleston Restaurant Other Than Yours: La Farfalle, although it depends on the day. We have so many choices in Charleston.

Comfort Food: My mother’s spaghetti with tomato and meat sauce.

Favorite Smell: Tea olive.

Favorite Drink: Gin and tonic.

Number of Hours You Work a Week: Too many. Probably 60, maybe more.

Customer Pet Peeve: I don’t really have any. It’s dumb luck, but people really like our cookies.

Most Under-rated Ingredient: Butter.

Favorite Meal to Cook at Home: Marinated salmon, brown rice, steamed vegetables.

Best Advice a Mentor Gave You: My mother, who told me I could do anything I wanted and to not quit.
